Swiss Cheesemaker Beat Wampfler, and his team of researchers at the Bern University of Arts conducted an interesting study on aging wheels of cheese. The university is located in Switzerland, which couldn’t be more fitting. The study was conducted last year, and involved nine different, twenty-two pound wheels of cheese. Each wheel was aged individually in wooden crates. While some where aged traditionally, others had a very unique addition into the aging process. The changeup in the process was when researchers played different types of music on a non-stop 24 hour loop of one song. In order to properly conduct the study, the researchers used a mini-transducer which produced soundwaves directly into the crates. They used music from Mozart, Led Zeppelin, Vril, Yello, A Tribe Called Quest and others. The results showed that cheese exposed to music had a milder flavor compared to their non-music counterparts. Hip-Hop and A Tribe Called Quest also produced a much funkier flavor and aroma. After their research had been conducted, the researchers then turned to a jury of culinary experts to taste test the cheeses to further their findings. The researchers remarked that the cheese aged with A Tribe Called Quest was remarkably fruity in taste and aroma.
